2016 Cabernet Sauvignon ($30/btl)

This wine has a bright red appearance with ruby red hues. The wine is lifted with orange blossom, charred vanillin oak and savoury black olive. The palate is medium bodied with elegant, crisp acid, firm tannins with flavours of raspberry and cherry chocolate, and hints of dusty earth and cigar box.
The 2016 Cabernet Sauvignon fruit was selected at 13.6 Baume from vines planted in 1998. This perfectly positioned North facing block in Yallingup creates exceptional power and fruit intensity. Using traditional winemaking techniques and a combination of new and seasoned French oak Barriques, the resulting wine is rich and juicy.

2020 Semillon Sauvignon Blanc ($18/btl)

Fresh and vibrant, showing intense aromas of citrus, synonymous with Northern Margaret River Semillon, and of course, the hallmark tropical and herbaceous characters that are Sauvignon Blanc.
The parcel of Semillon was barrel fermented and left for extended time on lees to enhance complexity and mouthfeel. The resulting wine shows fresh crisp acidity and a long zesty finish.

2022 Chardonnay ($24/btl)

Expressive and elegant, showing aromas of white nectarine, flint and citrus, along with nougat and toasted cashew from extended oak maturation.
Chardonnay grapes were picked at 11.7 Baume to lock in freshness, varietal characteristics, and to retain the attractive natural acidity. The grapes were lightly pressed, settled briefly, before wild fermentation in the barrel. The resulting wine remained on solids for a 10-month maturation with periodical stirring of lees to impart mouth feel, texture, and yeast characters into the wine.

2022 Shiraz ($22/btl)

This Shiraz is medium bodied, fruit-driven and delicious! It has flavours and aromas of plum, blackberry and violets, complemented by savoury undertones of spiced toasty oak. After a perfect growing season, this parcel of Shiraz was picked from our oldest vines at 13.5 Baume, maximising berry flavour and intensity. An extended cold soak of the fruit before fermentation allowed for a wine both rich and generous.
