The Chardonnay grapes were picked at 11.8 baume to lock in freshness, varietal characteristics and to retain its attractive natural acidity. The Grapes are lightly pressed and settled briefly before being pumped to barrel with high solids and fermented naturally. The resulting wine remains on solids for its entire 10 month maturation, being periodically stirred to impart mouth feel, texture and yeast characters into the wine.
